Spring Pea & Ricotta Crostini Recipe


Ingredients:

  • 1 cup fresh or thawed peas

  • 1/2 cup ricotta cheese

  • Zest of 1 lemon

  • Salt and pepper to taste

  • Baguette slices, toasted

  • Olive oil, for drizzling

  • Fresh mint leaves, chopped


Instructions:

  1. In a bowl, mash the peas slightly with a fork. Stir in ricotta, lemon zest, salt, and pepper.

  2. Spread the mixture onto toasted baguette slices.

  3. Drizzle with olive oil and sprinkle with chopped mint.
